Baked Salmon with Sweet Potato Mash

A proper comforting dinner that doesn't feel like diet food. Salmon baked in the oven is almost impossible to get wrong, and sweet potato mash made with a little Greek yoghurt instead of butter keeps it creamy without the saturated fat.
Ingredients
- 2 salmon fillets (approx. 150g each)
- 2 medium sweet potatoes (approx. 400g total)
- 2 tbsp fat-free Greek yoghurt
- 1 tsp Dijon mustard
- 2 tbsp lemon juice
- 1 tbsp fresh dill or parsley, chopped
- 1 clove garlic, minced
- Salt and black pepper
- Steamed green beans or tenderstem broccoli to serve
Method
- Preheat oven to 190°C. Prick the sweet potatoes and microwave for 10–12 minutes until soft, or bake for 45 minutes.
- Mix together the Dijon mustard, 1 tbsp lemon juice, garlic, and herbs. Spread over the top of each salmon fillet.
- Place the salmon on a lined baking tray and bake for 14–16 minutes until cooked through.
- Scoop the sweet potato flesh into a bowl. Add the Greek yoghurt, remaining lemon juice, salt, and pepper. Mash until smooth.
- Serve the salmon with sweet potato mash and steamed greens.
Pro Tip
The Dijon mustard crust keeps the salmon moist during baking and gives it a flavour boost without adding meaningful calories. This works equally well under the grill for a slightly crisper top — grill on high for 8–10 minutes.
