Meal Prep Turkey Mince Base

A batch of cooked turkey mince from Sunday carries you through the week. Toss it with pasta, spoon it into wraps, add it to salads, or use it as the base for a quick chilli. This neutral seasoning works across many different dishes.
Ingredients
- 1kg turkey mince (5–7% fat)
- 1 large onion, finely diced
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp dried oregano
- Salt and black pepper
Method
- Heat the olive oil in a very large frying pan or sauté pan over medium-high heat.
- Add the onion and cook for 4–5 minutes until softened.
- Add the garlic and cook for 1 minute.
- Add the turkey mince. Cook for 8–10 minutes, breaking it up constantly until fully browned. Drain any excess liquid.
- Stir in the paprika, cumin, oregano, salt, and pepper. Cook for 2 more minutes.
- Allow to cool before dividing into 6 portions.
- Store in airtight containers in the fridge for up to 4 days, or freeze for up to 3 months.
Pro Tip
Turkey mince releases more water than beef during cooking. Drain it off rather than letting the mince stew in its own liquid — this improves the texture significantly. A wide, shallow pan speeds up evaporation.
