Tuna Cucumber Boats

Cucumber boats replace crackers, bread, and pitta as the vessel for tuna mayo — cutting almost all the carbohydrates from the equation. Two halves of cucumber hollowed out and filled with seasoned tuna is a proper low-carb lunch that genuinely satisfies.

Ingredients

  • 2 x 145g tins tuna in spring water, drained
  • 1 large cucumber
  • 2 tbsp light mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 2 spring onions, finely sliced
  • Salt and black pepper
  • Paprika to garnish

Method

  1. Halve the cucumber lengthways. Use a teaspoon to scoop out the seeds, creating a hollow boat shape.
  2. Mix the tuna with mayo, Dijon mustard, lemon juice, spring onions, salt, and pepper.
  3. Spoon the tuna filling generously into the cucumber boats.
  4. Dust with paprika.
  5. Serve immediately.

Pro Tip

Pat the cucumber dry with kitchen paper after scooping — excess moisture on the surface makes the tuna filling slide around. Slightly salt the inside of the cucumber and leave for 2 minutes, then pat dry, to draw out more moisture before filling.

Nutrition Notes

A full cucumber provides only 3g of carbohydrates as the vessel, compared to 25–30g for two slices of bread. Two tins of tuna provide roughly 50g of protein between two servings, making these boats a genuinely high-protein, near zero-carb option.
