Turkey Sausage Breakfast Scramble

This is the sort of breakfast that makes a cut feel easy. High protein, low carb, and genuinely filling. Turkey sausages have a fraction of the fat of pork ones but still bring proper flavour to the plate.

Ingredients

  • 3 large eggs
  • 2 turkey sausages (approx 100g), sliced
  • 1/2 red pepper, diced
  • Handful of baby spinach (30g)
  • 1 spring onion, sliced
  • Salt and black pepper
  • Low-calorie cooking spray

Method

  1. Spray a non-stick frying pan with cooking spray and place over medium heat.
  2. Add the sliced turkey sausages and diced pepper. Cook for 5 minutes until the sausages are golden.
  3. Add the spinach and spring onion. Stir for 1 minute until the spinach wilts.
  4. Crack the eggs into a bowl, season with salt and pepper, and whisk lightly.
  5. Pour the eggs into the pan and gently stir with a spatula, folding the mixture as the eggs set.
  6. Remove from heat while the eggs are still slightly soft — they'll carry on cooking from residual heat.

Pro Tip

Heck chicken sausages from Tesco or Sainsbury's are another excellent lean option if you can't find turkey sausages. About 12g protein per sausage.
